We have taken our tradtional hard anodized surface and infused a polymer similar to nonstick into it’s pores- creating a surface that is a combination of both properties. Essentially you are cooking on metal and polymer- so food still sticks enough that you get incredible searing and browning, but releases easily for simple clean up. This is not a nonstick pan, you still need to use fats or oils when you cook, but not much- just enough to coat the pan. The surface is metal utensil safe and can go into the broiler to a temperature of 700 degrees F! Clean up is easy, generally just soapy water and a sponge, but to keep your pans looking perfect we recommend using “Bar Keepers Friend” and a green “Scotchbrite” nylon pad- inside and out (both can be found inexpensively in most grocery stores).
